2 lbs Silken Tofu

1 oz Ginger, chopped

2 oz Scallions, sliced thin

½ cup Rice Vinegar

⅓ cup Honey

⅔ cup Miso

⅓ cup Soy Sauce

¼ cup Garlic, pureed

¼ cup Lemon Juice, fresh

⅓ cup Matriark Upcycled Vegetable Broth Concentrate

1 oz Cilantro, chopped

1 cup Extra Virgin Olive Oil

2 tsp Kosher Salt

1 tsp Black Pepper, fresh cracked

1. In a high speed blender add tofu, ginger, vinegar, honey, miso, soy sauce, garlic, lemon juice and Matriark Upcycled Vegetable Broth Concentrate. Start blending on low speed.

2. While blending slowly add Extra Virgin Olive Oil until dressing becomes smooth and emulsified.

3. Remove tofu mix in bowl and fold in scallions and cilantro.

4. Season with salt and fresh cracked black pepper.
