Shakshuka is a delicious and warming dish commonly enjoyed in North Africa & the Middle East. This simple recipe uses Handsome Brook Farms organic pasture raised eggs, poached in a rich tomato base made with Matriark Upcycled Gentle Marinara Sauce and Rumi Harissa Spice Blend.

2 tbsp olive oil

4 Handsome Brook Farms Eggs

1/2 onion, diced

1/2 red bell pepper, diced

4 garlic cloves, minced

3 tsp Rumi Harissa Spice Blend

1 carton Matriark Gentle Marinara

To top:

Cilantro, chopped

Feta, crumbled

Olive oil, drizzled

Toasted pita or crusty bread for serving


  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and bell pepper and cook for about 5 minutes.

  2. Add the minced garlic and Rumi Spice Harissa Spice Blend. Cook for about a minute.

  3. Pour the Matriark Gentle Marinara sauce into the pan. Season with salt and pepper and bring the sauce to a simmer.

  4. Use a spoon to make wells in the sauce and crack the eggs into each well. Cover and cook for about 6 minutes, or until the whites are mostly set.

  5. Top with chopped cilantro, crumbled feta and a drizzle of olive oil. Serve with toasted pita or crusty bread.
